Drawing inspiration from the malty and robust French Bière de Garde style, this tart, amber-colored farmhouse ale was brewed at a strength “for keeping” before being aged in neutral French oak barrels and foeders. Once mature, we blended and conditioned Rolling Mist on Oregon-foraged Sitka Spruce tips, an ingredient we’ve been wanting to work with for quite some time. The resulting beer is a rich expression of Oregon terroir, conjuring images of a foggy winter morning walk in the woods. Tantalizing evergreen and citrus aromas waft from the glass, providing a refreshing balance to the toasty malt flavors of the base beer and begging you to take another sip.
